VEGAN WINTER BERRY CRUMBLE



I'll be honest here.... this is my 4th time baking this and I still haven't gotten tired of it. This dessert is that good. If there's one thing about me, when I really like something, I can't seem to stop eating the same thing for like a month straight until I finally give up and try something different. This Winter Berry Crumble is so perfect for the chilly season with it's natural sweetness from the fruit juices that caramelize, to the buttery and flaky gluten-free crust piled on top. You would probably think I'm lying to you when I say this is a guilt-free, healthy dessert... but I'm not, I promise! Try it out for yourself. You won't regret it ♡


SERVES: 8

PREP TIME: 20 minutes

COOK TIME: 30 minutes



INGREDIENTS:

Filling

• 1 apple
• 2 cups strawberries
• 2 cups blackberries
• 2 cups cherries, halved & de-stoned
• 1/4 cup coconut sugar
• 1 tsp ground cinnamon

Crumble

• 2 cups rice flour (brown or white)
• 1 cup almond flour
• 1 1/2 cups oats
• 1 1/2 cups softened vegan butter
• 1 cup coconut sugar



INSTRUCTIONS:

1. Preheat oven to 400° degrees. Grate the apple until you reach to the core and place into a large mixing bowl.

2. Cut the cherries in half and remove the seeds, then place into the bowl with the apple.

3. Combine the strawberries, blackberries, cinnamon, and coconut sugar then mix well. Scoop the filling into a large skillet or a 9 x 13 baking dish.

4. In a separate bowl combine the oats with the coconut sugar, rice and almond flour. Pour the softened vegan butter on top of the dry mixture and stir thoroughly until the crumble resembles the look and texture of sand.

5. Sprinkle the crumble mixture evenly on top of the filling and bake for 30-35 minutes, or until the top layer is golden brown, and the berry filling is thick and bubbly.

6. Let cool for about 10 minutes and serve with a scoop of vegan ice cream, and a garnish of fresh mint leaves.

  3. This looks like it would be a great breakfast recipe too -- without the ice cream of course! I've slowly been incorporating some vegan recipes into my life, looking forward to giving this one a try!

  7. This looks so delicious! Since I don't eat gluten or dairy, I end up eating a lot of paleo and vegan recipes and I will definitely be trying this one! What vegan butter do you prefer? Thanks for sharing this! Can't wait to try it :)

    1. I use Earth Balance Butter... soy, dairy, gluten & nut free! And it tastes wayyyyy better than dairy butter. We get ours at Fry's and I know a lot of other stores carry it. Let me know how you like it!
